Fried Oyster Omelet

My favorite Taiwan night market snack is fried oyster omelet (蚵仔煎), a simple but tasty dish that – as it name implies – consists of small oysters fried in egg batter with a savory sauce on top.

The one I had at Keelung Miaokou night market (廟口夜市) certainly didn’t disappoint with its rich flavor and texture. Indeed, sublime would be a better description.
